I’m kinda a salmon snob. I don’t want any of that farm salmon that swims around eating it’s own poop😷 but fresh, wild caught salmon can be so expensive. Lately I’ve been getting frozen, wild caught salmon and it’s surprisingly so good, not dry at all. This simple salmon rice bowl came together so quickly.
defrost salmon by soaking packages in room temp water for 30 minutes. Remove salmon from its package and pat dry with a paper towel. Season each side with salt pepper and garlic powder. Heat a shallow pan to medium high heat and add olive oil. Place the salmon skin side up an allowed to cook for about 4 to 5 minutes until nicely browned. Flip and let cook an additional 3 to 4 minutes or until the internal temperature reaches 145°. As the salmon is cooking squeeze lemon juice on top of it and throw the lemon into the pan with the salmon. One salmon is cooked serve over rice and drizzle with toasted sesame oil, scallions, and sesame seeds. Include any veggies you like, roasted or fresh.
