the most comforting food: toast. I’m all for only butter on toast, but added a little extra love to this one w/ whipped ricotta and home made chia blueberry jam.
to make:
mix 1.5 cups of fresh or frozen blueberries with a splash of maple syrup, lemon zest, and a few tablespoons of lemon juice in a saucepan. heat over medium until the blueberries start to burst, stirring occasionally. smash a few blueberries w/ the back of a wooden spoon and turn the heat up, bringing the juices to a boil and allowing them to reduce for a few minutes. turn off the heat and add 3 tablespoons of chia seeds and mix. store in the fridge.
add to toast, yogurt, crackers, anything you want!
